Greek Style Chicken Meatballs
Ingredients
- 1 pound ground chicken 
- 1 egg 
- ¼ cup almond flour 
- ¼ cup feta 
- 1 tbsp garlic powder 
- 1 tbsp oregano 
- 1 tbsp chopped fresh dill, finely chopped 
- 2 tbsp fresh parsley, finely chopped 
- Salt and pepper to taste 
Directions
- Preheat your oven to 400° 
- In a large bowl combine ground chicken, egg, almond flour, feta, garlic powder, oregano, fresh dill, fresh parsley, salt, and pepper to taste 
- Using an ice cream scoop or tablespoon create meatballs 
- Place meatballs on a greased baking sheet 
- bake for 25-30 minutes until golden brown 
- I like to serve these with rice, tomato, cucumber, olives, feta, and tzatziki or hummus 
- This can be stored in the freezer or fridge for meal prep
