Protein Pesto Pasta
Ingredients
- 1 cup Cottage Cheese 
- 1 cup basil leaves 
- 3 cloves of garlic 
- 1 tsp olive oil 
- 1/3 cup parmesan 
- Juice of 1/2 lemon 
- 3 tbsp pine nuts 
- Salt and Pepper to taste 
- 12 oz pasta 
Directions
- Add garlic and pine nuts to a pan on medium heat for 3-4 minutes until toasted 
- Cook Pasta Al Dente according to package instructions then drain reserving 1/2 cup pasta water 
- Add all other ingredients to a blender or food processor and puree until your pesto sauce is smooth 
- Add sauce to a pan with your cooked pasta and stir to combine. If needed, add reserved pasta water to thin your sauce. 
- Plate with red pepper flakes and parmesan
