Princess & The Pea Pasta
Ingredients
- 1 pound short pasta (like shells or fusilli) 
- 3 tablespoons chopped fresh chives 
- 1 cup frozen peas 
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs) 
- 1/2 cup grated Parmesan 
- Zest and juice of 1 lemon 
- 1 tablespoon olive oil 
- Salt and pepper, to taste 
Directions
- Cook pasta in a large pot of salted boiling water until al dente. Reserve 1 cup pasta water, then drain. 
- While pasta cooks, heat a drizzle of olive oil in a large skillet over medium heat. Add the chives and cook for 1 minute until fragrant. 
- Add peas, Boursin, and a generous splash of pasta water to the skillet. Stir until the Boursin melts into a creamy sauce. 
- Add the drained pasta to the pan and toss to coat. Add more pasta water as needed to thin the sauce. 
- Stir in Parmesan, lemon zest, and lemon juice. Toss until glossy and well combined. 
- Season with salt and black pepper. Serve with extra chives and Parmesan.
