Weeknight Turkey Meatballs
Ingredients
1 pound lean ground turkey
1/2 cup finely grated Parmesan
1/2 cup panko breadcrumbs
1 egg
2 tablespoons milk
2 tablespoons olive oil
Zest of 1 lemon
2 cloves garlic, finely minced
1 teaspoon Italian seasoning
1.5 teaspoons kosher salt
Freshly ground black pepper
Directions
Heat the oven to 400°F. Line a sheet pan with parchment paper.
Add the ground turkey, Parmesan, panko, egg, milk, olive oil, lemon zest, garlic, Italian seasoning, salt, and black pepper to a large bowl and gently mix just until combined.
Roll the mixture into golf-ball-sized meatballs and arrange them evenly on the prepared sheet pan.
Bake for 16 to 18 minutes, until cooked through and lightly golden.
Remove from the oven and serve warm.
