Vegan Cookie Dough Truffles
Ingredients
- 1/2 cup nut butter (such as almond, peanut, or cashew butter) 
- 2 tablespoons maple syrup 
- 1/4 cup coconut flour 
- 1/4 cup almond flour 
- 1/4 cup chocolate chips for filling 
- 1/2 cup chocolate chips for coating 
- optional flakey salt for sprinkling on top 
Directions
- In a mixing bowl, combine the nut butter and maple syrup until well blended. 
- Add the coconut flour and almond flour to the nut butter mixture, stirring until fully incorporated and a dough forms. 
- Fold in 1/4 cup chocolate chips until evenly distributed throughout the dough. 
- Place the dough in the refrigerator for about 30 minutes to firm up. 
- Once the dough has chilled, use a small cookie scoop or tablespoon to portion out the dough and roll it into balls using your hands. 
- Melt additional chocolate in a heatproof bowl and dip each truffle into the melted chocolate to coat. Place the coated truffles on a parchment-lined baking sheet. Optionally sprinkle with salt 
- Allow the chocolate coating to set either at room temperature or in the refrigerator. 
- Once set, transfer the truffles to an airtight container and store in the refrigerator until ready to serve.
