Pink Princess Pasta

Ingredients 

  • 1/2 box dried pasta

  • 2 tablespoons olive oil

  • 1 garlic clove, grated or minced

  • 2 tablespoons tomato paste

  • 1/4 cup heavy cream

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon chili flakes (optional)

  • Salt, to taste

  • Black pepper, to taste

  • 2 tablespoons Parmesan, finely grated

  • Pasta water, to loosen the sauce if needed


Directions

  1. Boil the pasta in salted water until al dente. Reserve some pasta water, then drain.

  2. Heat olive oil in a pan over medium-low heat. Add the garlic and chili flakes and stir for 30 seconds until fragrant.

  3. Add the tomato paste and cook for 1 to 2 minutes until it deepens in color and smooths out.

  4. Pour in the heavy cream and stir until the sauce turns pink.

  5. Season with onion powder, salt, and black pepper.

  6. Add the pasta back into the pan and toss to coat.

  7. Sprinkle in the Parmesan gradually while stirring on low heat until melted into the sauce.

  8. Add splashes of pasta water as needed until the sauce is glossy and clings to the noodles.
